This is a great side dish. I have made this recipe multiple times and have found that a quick parboil in the microwave really helps to get it cooked correctly. The other times I just baked it, the outside was overdone and the inside was still raw. That was not palatable.
Mix one container of Greek yogurt, the juice of 1 lime, 1 t. Curry powder, 1 T. chili powder, 1 t. salt, and 1 t. cumin.
Take a large glass bowl with 1/2 C water in it and microwave the cauliflower (whole head) over it for about 5 minutes. That should cook the inside slightly.
Rub the Greek yogurt mixture over the top.
Broil to give it some brown on top, 4 to 6 minutes.
Wedge and serve.
