Instant Pot Mushroom Bisque

A rich bisque that's lightened up by a surprise thickener! Healthier!

Ingredients

  • 4 cups water divided
  • 3/4 cup dried mushrooms
  • 2 chicken bone broth cubes
  • 8 ounces mushrooms sliced or diced
  • 2 tablespoons beef base
  • 1/2 cup dry sherry
  • 1/4 cup heavy cream
  • salt and pepper to taste

Instructions

  • Heat 1 cup water with dried mushrooms and mushroom stems in Instant Pot for 20 minutes high pressure, 18 minutes Max pressure. Quick release. Puree mushrooms and liquid. Add remaining ingredients except cream and cook on Max pressure 20 minutes, high pressure 18 minutes. Quick release. Add whipping cream and season to taste.
