This is a simple one…mostly just to talk about how much we enjoyed the Tomahawk steak from Wild Fork Foods. This is the third time I’ve ordered from Wild Fork, and I have been very pleased with the quality!
I was wracking my brain trying to figure out how was going to get this bagged up for the sous vide…then duh it occurred to me, just put the whole thing in, in its original packaging. This worked like a charm!!
I use an older style Anova Sous vide machine, this is a more current model but similar.
I also use this this sous vide container, this lid, and this neoprene insulator. It’s a super-slick setup that I’m very happy with!
I cooked this steak in the sous vide bath at 124 degrees Fahrenheit for 16 hours. And when it was done…
Anemic. Anemic as all hell!! But we’ll take care of that. First, a little Chami Yum smoked sea salt. It’s the bomb!
Then hit it on the grill using the Vortex to maximize heat. If you don’t have one of these, I highly recommend it! It works great to both maximize heat, as well as creating a cooler area outside the ring.
MMMM!! Perfection. I served with some lobster tails because why not…
That meat was just amazingly flavorful, the fat just melted in our mouths! Definitely try Wild Fork if you’re in the mood for a steak (and they have a crazy variety of meat).
