King Arthur Flour Amish Dinner Rolls

These are amazingly soft and delicious.

Ingredients

  • 2 large eggs
  • 1/3 cup 67g sugar
  • 2 1/2 teaspoons salt
  • 6 tablespoons softened butter
  • 213 g unseasoned mashed potatoes
  • 2 1/2 teaspoons instant yeast or active dry yeast
  • 170 g lukewarm water water in which the potatoes were boiled, if possible
  • 510 g King Arthur Unbleached All-Purpose Flour
  • 1/4 cup sourdough starter

Instructions

  • Mix all ingredients in a stand mixer. I highly recommend weighing out the water, mashed potatoes, and flour for this recipe. Allow to rise for 1 to 1 1/2 hour, until doubled. Separate into 24 pieces and roll into balls. Place in 13X9 pan. Allow to rise for 45 minutes to 1 hour until doubled. Bake at 350 degrees for 20-25 minutes and brush with more melted butter.
