My husband loves shrimp and grits, so I set out to make some that are similar to a restaurant we go to. Looking at how grits are normally cooked, I felt like I could use the Instant Pot to make them faster and easier (less stirring and babysitting).

Cheese grits are delicious.

Add water, corn meal and salt to the Instant Pot. I am currently using the Instant Pot Max and I love the Max pressure as well as the automated venting. So convenient! Cook on max pressure for 20 minutes or high pressure for 25, and quick release.

You can just barely tell but the grits have absorbed the water. Add your cream and butter. I did at this point use an immersion blender to break up several chunks I had, and because I wanted a velvety texture. It worked like a charm! If you do not have an immersion blender I highly recommend it, I use mine all the time. Breville Immersion Blender. Add your cheese and stir until melted.

And serve with your shrimp and grits. Amazing!
Instant Pot Cheese Grits
Ingredients
- 5 cups water
- 1 cup corn meal
- 4 tablespoons butter
- ¼ cup heavy whipping cream
- ½ teaspoon salt
- ½ cup sharp cheddar cheese shredded
Instructions
- Combine water and grits in Instant Pot. Cook on max pressure for 20 minutes or high pressure for 25 minutes then quick release. Add butter and cream and mix. If there are lumps, use an immersion blender to blend them out. Add more water if grits are too thick. Add cheese and melt and stir.
