Lobster rolls are delicious, I prefer mine with just a bit of kick (like everything else). But this is a very simple recipe.

It all started off with a dream. In the dream I had, I was picking out HUGE lobster tails to eat (I mean they were prehistoric sized). Sadly, I woke up before I could eat them in my dream.
I told Aaron about my dream as we were driving in to work. After he dropped me off, he told me he had seen a seafood/lobster truck on the way to work. I talked to a co-worker and mentioned my dream, and she said she had seen something on TV the day prior about catching lobsters. That was it, I knew there was lobster in my near future. The universe demanded it.

Of course the key is to start out with very high quality lobster. I ordered mine from Maine Lobster Direct. I ordered the lobster at around 5 pm on a Thursday, and it was delivered to my door by around 10 the following morning. The dream was realized. For this recipe I used 8 oz of claw and knuckle meat. I chopped it up just a bit finer than this.

Mixed with 1/3 cup mayonnaise, 1/4 cup of finely chopped celery, 2 tablespoons chopped green onions, 2 teaspoons lemon juice, 1/2 teaspoon celery salt and 1/4 teaspoon cayenne pepper

Very easy to do!

And served on a homemade New England style hot dog bun.
