Look I lived through the ’70s. I mostly remember it…but there’s one thing I JUST don’t get: savory Jell-o salads.

Maybe it’s because it was mostly phased out by the time I was a kid? Maybe it’s because my parents were hippie health freaks who wouldn’t even let us have white bread. It kind of looks like something my grandmother would serve because it would look elegant (and she was actually an elegant lady) however I’m one-hundred percent certain I’d have remembered this…

I’ve heard they’re still popular in Utah?
But…why? And they even dedicated a week to it?

Oh dear. It’s just always fascinated me this whole idea. Like the same way waxing your eyebrows and looking at the hair on the wax fascinates me. You can’t look away.
What even is that thing? I’m scared to ask.

Lime Jell-o and seafood salad? With onions? Oh dear. The only part I can get on board with this is the lime Jell-o and cottage cheese. I make this thing with a packet of lime Jell-o (powdered), a container of cottage cheese, and a can of crushed pineapple and it’s delicious, but even that I can admit might not be for everyone (the kids certainly won’t eat it even though I call it “grasshopper salad”).

Apparently they even made celery flavored Jell-o for you to stick your chicken and cucumbers in. I’m not sure about that one. I wonder if they still make it? Now I must go search the Googles to find out…
