I threw these together with some leftover grilled steak, but it could be made with any kind of meat or just cheese, and is a great way to use leftovers.

Dice steak into small pieces and toss with taco seasoning.


Dice onion and jalapeno.

Assemble enchiladas and add to pan. Here I added beans, the Goya beans with Chorizo are very good in this and smooth, steak, onions, jalapeno and cheese.

Add enchilada sauce on top. I used my homemade enchilada sauce. This is well worth the effort.

Add cheese on top, cover with foil, and bake until cooked through. For these it was 350 for about 45 minutes.

I served these with Baja sauce, the recipe can be found with my fish tacos. We also enjoyed some spanish rice and avocado.
