Instant Pot Beef Barbacoa

Ingredients

Barbacoa Beef

  • 1 3 pound beef chuck roast
  • salt and ground black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons Beef Base
  • 1/4 cup apple cider vinegar
  • 1/4 cup fresh lime juice
  • 4 chipotle peppers in adobo sauce chopped
  • 4 cloves garlic minced
  • 1 tablespoon ground cumin
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano

Cilantro lime rice

  • 2 cups water
  • 1 cup rice
  • 1 lime juiced
  • 1/4 cup cilantro chopped

Instructions

  • Spray Instant Pot with olive oil and sear on all sides. Add remainder of ingredients and slow cook on low for 6 hours or high for 4 hours. Shred beef.
  • For Rice
  • Boil 3 cups water and add rice. Cover and set stove to low. Cook for 20 minutes until rice is done. Add juice of 1 lime and cilantro.
