Instant Pot Reuben Dip

The amazing sandwich, but in dip form!! Meaty, tangy and so good, and so easy using the Instant Pot!

Ingredients

For the Meat

  • 1 corned beef roast
  • 12 ounce pilsner beer
  • 1 tablespoon onion powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground black pepper
  • 3 cloves garlic

For the Thousand Island Dressing

  • 1 cup mayonnaise
  • 1/3 cup ketchup
  • ¼ cup sweet relish
  • 4 tablespoons finely chopped onion
  • 2 tablespoons dehydrated green and red bell peppers
  • 1 tablespoon onion powder
  • ½ tablespoon granulated garlic
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper or to taste
  • 1/8 teaspoon MSG

For the dip

  • 14 ounces sauerkraut
  • 1 ½ cups shredded Swiss cheese
  • 1 cup Thousand Island dressing
  • 8 ounces cream cheese

Instructions

For the meat

  • Add meat to the Instant Pot with beer and spices. Cook in Instant Pot for 45 minutes and quick release. Meat should be tender but if it’s not, cook it longer.

For the Thousand Island Dressing

  • Mix ingredients. Let sit overnight. Serve on salad or as a sandwich spread.

For the dip

  • Slice meat and add to slow cooker with cream cheese, sauerkraut and Thousand island dressing. Cook on high until the cream cheese melts, and stir. Meat should be falling apart. Add Swiss cheese and allow to melt. Serve with mini-pumpernickel loaves.
