There are hundreds (millions?) of Reuben dip recipes on the interwebs. What makes this one different (and better IMO)…
1. the corned beef is cooked from scratch. Why? Well…1. it’s cheaper than buying from the deli. 2. It’s fresher. 3. It tastes better. The other thing is making your own thousand island dressing from scratch makes this FAR more flavorful. I’m not saying you can’t sub in thousand island that was purchased (I’m not judging) but I promise you this makes a difference in the overall flavor.
For the corned beef:
This is basically the corned beef that you buy in the meat case in March (during St. Patrick’s day festivities). I’ve found that typically, after March 17th, the prices of these go to rock-bottom, and I buy 4-5 of them and use them through the next year.
If you put them in the Instant Pot and cook with beer and spices (I discard the spice pack. It creeps me out for some reason) it’s so flavorful and the perfect texture for slicing and making sandwiches, or corned beef hash or this dip. Or just for eatin’! You can also do this in a slow cooker!
Ready to cook. Cook on high pressure for 40 minutes, and quick release. Poke the meat, it should look almost ready to fall apart. All cuts are different, so it may need to cook more. Then slice.
Then, make your dip.
Philly, Swiss, corned beef, sauerkraut, thousand island. So good!
Warm the cream cheese in the microwave for 30 seconds, then mix
Add to slow cooker and top with Swiss cheese. I used my Nomad because we were going to a gathering and ’cause it’s *awesome*. Cook on high cook until fully melted and bubbly! If you’re not going out, just set your Instant Pot to high slow cook, and do the same.
And serve with those tiny rye breads they sell at the deli counter.
Your guests will be blown away by the flavor in these!!

Ingredients
For the Meat
- 1 corned beef roast
- 12 ounce pilsner beer
- 1 tablespoon onion powder
- 1 tablespoon onion powder
- 1 teaspoon ground black pepper
- 3 cloves garlic
For the Thousand Island Dressing
- 1 cup mayonnaise
- 1/3 cup ketchup
- ¼ cup sweet relish
- 4 tablespoons finely chopped onion
- 2 tablespoons dehydrated green and red bell peppers
- 1 tablespoon onion powder
- ½ tablespoon granulated garlic
- 1 teaspoon paprika
- ¼ teaspoon cayenne pepper or to taste
- 1/8 teaspoon MSG
For the dip
- 14 ounces sauerkraut
- 1 ½ cups shredded Swiss cheese
- 1 cup Thousand Island dressing
- 8 ounces cream cheese
Instructions
For the meat
- Add meat to the Instant Pot with beer and spices. Cook in Instant Pot for 45 minutes and quick release. Meat should be tender but if it’s not, cook it longer.
For the Thousand Island Dressing
- Mix ingredients. Let sit overnight. Serve on salad or as a sandwich spread.
For the dip
- Slice meat and add to slow cooker with cream cheese, sauerkraut and Thousand island dressing. Cook on high until the cream cheese melts, and stir. Meat should be falling apart. Add Swiss cheese and allow to melt. Serve with mini-pumpernickel loaves.
