I’m really not certain which area of my brain came up with this idea…but whatever! It did. The classic Cuban sandwich is an amazing sandwich to begin with (and a great way to use up leftover pulled pork!) But I wanted something a little different!

If you like things that are a little spicy, a little sweet, and a little tangy, give this a try!
What are those blue things? Well they’re Kool-Aid Pickles. I know this is a thing that most Northern folks aren’t real familiar with, but they’re a really good snack! Sounds crazy, I know. For these I used Ice Blue Raspberry Lemonade, but you could really use any flavor.
I made this sandwich using homemade Cuban Bread. Start with spicy brown mustard. I used homemade spicy brown mustard. Add cheese, ham and pulled pork.

And your beautiful pulled pork.

And the star of the show…neon blue pickles! (the kids got a real kick out of this by the way!)

And more cheese. Then grill in your panini press. I use the Cuisinart 5 in 1 Griddler. This was a pretty huge sandwich, but the Griddler handled it well!

And cook until the cheese is all melty and the meat is warm.

And extra gooey!
