First off, I want to say HI HOLLY! Hope you’re enjoying.
Maybe it’s because we live so close to Chicago, but Italian beef sandwiches are a staple in Milwaukee cuisine. And they are amazing!

For the beef. I used leftover tenderloin, sliced against the grain. This is where having an electric meat slicer comes in so handy. I use this thing far more than I ever thought I would. With the meat slightly frozen, you can get very nice, thin and consistent slices. Also perfect for slicing beef for pho, but that’s for another day.
The sauce is simple, it’s a beer (Miller Lite in this case), Maggi beef base, some cloves of garlic (smashed), onion powder, garlic powder and pepper.

Add all to the Instant Pot. Add a sliced onion of you’re into that sort of thing. I am using the Instant Pot Max. I love it because it has the max pressure (faster!! Yay!) and for the automated release (multitasking! Yay!)
Cook on Max pressure for 20 minutes or high pressure for 25. Quick release.

Make your sauce. 1/4 Hellman’s Mayonnaise, 1/4 cup good white vinegar, and half a packet of Good Seasoning’s Italian dressing.

Mix. This is so tangy and creamy!

Assemble the sandwiches. For this recipe I used King Arthur Flour’s Chewy Sandwich Rolls.

Sliced horizontally.

And add your delicious beef. It should be basically about to fall apart. If not, cook it more.

Cheese. This could be mozzarella, cheddar, or some mix of your preference.

Sauce.

And Cento Hoagie Spread. This stuff is the BOMB.

Put your lid back on.

And bake covered at 350 degrees Fahrenheit until heated through all the way and cheese is melty. 35 to 40 minutes. But…if you’re a true Italian Beef lover, you know there’s something wrong with this picture…

There. Fixed it. Bring the sauce left over in the Instant Pot back up to a boil on the saute function, then ladle over the sandwiches. “Dipped” is the only way to eat Italian Beef.

Oooey. Gooey.

Tangy. YUM.
