This is a very easily made appetizer, that we always serve on Christmas morning (but really it’s great any time!)

Ingredients:
- Brie
- Cranberry Chutney
- Onion Powder (for umami)
- curry powder
- Cayenne pepper (for kick!)
- Instant Pot Cranberry Jalapeno Chutney (you can use any chutney, really but this one makes a really great combination!)
- Puff Pastry
Instructions

Place brie on top of defrosted pastry sheet and rub with spices. I leave the rind on. I know some people do remove the top rind, but to me that’s where brie gets most of its flavor! Starting with a room-temperature brie makes the cooking in the oven go faster and more evenly.

Add chutney and place second pastry sheet over top. Wrap and secure pastry underneath.
Using this Fat Daddio’s cheesecake pan makes removal very easy and it’s fantastic to use in the Instant Pot (to make cheesecake and meatloaf and other sundry items).
Bake in a 350 degree Fahrenheit oven for 45-60 minutes until top is golden.

Allow the pastry to cool for about 15 minutes, then slice into wedges and serve. Waiting to cool a bit prevents all of the cheese from running out immediately when cut. Some will still run out but unless you wait until it’s completely cold you can’t avoid that. This reheats very nicely.


Surprisingly, even my relatively picky 16 year old (who doesn’t like “stuff” cooked with “other stuff”) likes this, as does my nine-year old daughter (who is also slightly picky and likes crab, but not shrimp or lobster go figure).

Baked Brie With Cranberry Jalapeno Chutney
Ingredients
- 1 19 ounce brie wheel
- 1 17 ounce box puff pastry thawed
- 1 tablespoon curry powder
- 1 teaspoon onion powder
- 1/8-1/4 teaspoon cayenne pepper to taste
- 1/4 cup cranberry chutney or any chutney
Instructions
- Unfold one of the puff pastries and place it in a pan. Place the brie wheel on top of the pastry and rub the top with spices, and put the chutney on top. Place the second puff pastry on top, and wrap under the bottom to secure. Bake in a 350 degree Fahrenheit oven for 45-60 minutes until top is golden.
