I *love love love* olives, as does everyone else in my family. And I love blue cheese. So I whipped this up one night when we were having appetizers for dinner, and it is absolutely amazing. I completely love chipped beef dip, but honestly I think this is better, and it comes together SO quickly.

The ingredients:
- Philly cream cheese (love my Philly!)
- Daisy Sour Cream
- Byzantine Olive Mix– we buy these in bulk and they are just so great for snacking on.
- Roth Buttermilk Blue Cheese. You could use another but I’m telling you this stuff is to die for.
- Dried chives

I like to warm up the Philly in the microwave for about 45 seconds, otherwise it’s ridiculously hard to mix into the sour cream. Mix the 2 together until there are no more lumps, then add the rest of the ingredients.
I like to mash some of the blue cheese into the sour cream mix and leave some of it chunky.

And serve with crackers, some prosciutto, and of course, a Bombay dirty martini with blue cheese stuffed olives.
