I’ve made ooey gooey cakes in the past and I wanted to make one but felt like 2 layers just wasn’t sufficient that day. I needed more.
If you’ve never had an ooey gooey cake, it’s really closer to a bar dessert than a cake. Regardless, delish.


Start with a box cake mix, in this case I used a lemon cake. Add a stick of melted butter and two eggs and mix. Obviously this is going to be very thick.

To the best of your ability spread it in a 9X13 pan or one of these disposable half-pans. Super convenient for carrying to a friends house (which we were).
Mix a package of cream cheese, 2 eggs, 1 teaspoon of vanilla, four cups of confectioner’s sugar, and ANOTHER stick of butter in. Best if these are all at room temperature. Spread the cream cheese layer over the cake layer and bake for about 35 minutes. You want the center to still be a little jiggly.

After baking. This is where most ooey gooey cakes stop.

I spread a layer of Key Lime Curd over top.

I wanted to lighten the key lime curd a bit, so I made a stabilized whipped cream. Basically adding some cream cheese to the heavy whipping cream when whipping adds some stabilization. Otherwise your whipped cream will separate within an hour or so.

Whip a cup of heavy whipping cream with 2 tablespoons cream cheese and 1/4 cup confectioners sugar.

Lemon Lime Ooey Gooey Cake
Ingredients
Cake Layer
- 1 package lemon cake mix
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup butter at room temperature
Cream Cheese Layer
- 1 package 8 ounces cream cheese, room temperature
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup butter at room temperature
- 4 cups confectioners sugar
Key lime layer
- 3 eggs
- 1 cup sugar
- 1 cup Key Lime juice
- 4 tablespoons butter
Stabilized whipped cream layer
- 1 cup heavy whipping cream
- 1 teaspoon vanilla
- 1/2 cup confectioners sugar
- 2 tablespoons cream cheese
Instructions
- Mix cake layer ingredients together and spread in a 9X13 pan. Mix cream cheese layer ingredients together and layer over top of cake layer. Bake in 350 degree Fahrenheit preheated oven for about 35 minutes until outsides are set and inside is still slightly jiggly. Allow to cool for 30 minutes.
- For the key lime layer add sugar, lime juice and eggs to a very large mixing bowl or measuring cup and whisk together. Microwave on high at 30 second intervals (whisking between intervals) until the mixture is thick enough to coat the back of a spoon. Add butter and whisk until melted. Allow to cool refrigerated for an hour and layer over top of cream cheese layer.
- For stabilized whipped cream, add all ingredients to stand mixer and whip until medium peaks form. Spread in with key lime layer.
