I absolutely love ooey gooey cakes, but sometimes that part of it is just a little too rich for me. I need something to brighten it up. For this strawberry lemon ooey gooey cake, I lightened it up with some delicious fresh strawberries and fresh lemon curd (which is very easy to make from scratch!)
Ingredients
- Strawberry cake mix – I prefer Duncan Hines.
- Philly cream cheese and LOTS of it!
- lemons, butter, eggs
- Watkins Vanilla
Instructions
Start with a box cake mix, in this case I used a strawberry cake. Add a stick of melted butter and two eggs and mix. Obviously this is going to be very thick. (the picture is of a lemon cake, same technique).
To the best of your ability spread it in a 9X13 pan or one of these disposable half-pans. Super convenient for carrying to a friends house (which we were).
Make the cream cheese layer and spread over the cake layer.
And bake. Before and after baking…
Allow to cool, and add your sliced strawberries.
For the lemon layer, add sugar, lemon juice and eggs to a very large mixing bowl or measuring cup and whisk together. Microwave on high at 30 second intervals (whisking between intervals) until the mixture is thick enough to coat the back of a spoon. Add butter and whisk until melted. Allow to cool refrigerated for an hour and layer over top of cream cheese layer. Visual instructions can be found here: Lemon Curd
And spread over strawberries.
For stabilized whipped cream, add all ingredients to stand mixer and whip until medium peaks form.
Spread in with key lime layer or pipe onto top.
And serve. Your family will really enjoy this, I know mine did!

Ingredients
Cake layer
- 1 package strawberry cake mix
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup butter at room temperature
Cream Cheese Layer
- 1 package 8 ounces cream cheese room temperature
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup butter at room temperature
- 4 cups confectioners sugar
Strawberry Layer
- 8 ounces strawberries sliced
Lemon Curd Layer
- 3 eggs
- 1 cup sugar
- 1 cup lemon juice
- 4 tablespoons butter
Stabilized Whipped Cream Layer
- Stabilized whipped cream layer
- 1 cup heavy whipping cream
- 1 teaspoon vanilla
- 1/2 cup confectioners sugar
- 2 tablespoons cream cheese
Instructions
- Mix cake layer ingredients together and spread in a 9X13 pan. Mix cream cheese layer ingredients together and layer over top of cake layer. Bake in 350 degree Fahrenheit preheated oven for about 35 minutes until outsides are set and inside is still slightly jiggly. Allow to cool for 30 minutes. Add strawberries.
