I found a pound of crawfish in my freezer (what a find right!) and I wanted to try a new recipe. I couldn’t quite find one I liked, so I combined about 3 of them together and added a few of my own twists (as I do). I also updated the recipe to cook in the Instant Pot, so…FAST and easy cleanup. Plus I really love the flavors the pasta develops when it cooks with the sauce.

Key Ingredients:
- Louisiana Crawfish Tail Meat (these are amazingly good!)
- Seafood Stock, similar to what I make here in my Lobster Bisque. Save your shells!! They’re packed with flavor!
- Chicken Bone Broth Stock Cubes I add these along with the seafood stock because the amount of collage in the bone broth gives the pasta a silky flavor.
- Fusilli is the traditional pasta used in Crawfish Monica.
- Better Than Bullion Lobster Base, because it’s AMAZING.
- Sola Reduced Sodium Cajun Seasoning, also AMAZING. I use low sodium because the lobster base does contribute a fair amount of sodium.
- Cheap wine. I’ve heard chefs say “don’t cook with wine you wouldn’t drink”. There are studies that show that if someone perceives a wine to be expensive they will upgrade it in blind tasting and that very few people can tell the difference. Possibly, but after adding cajun seasoning? I’m not sure that’s true.
Instructions:
Add pasta, seasonings, butter, seafood stock, stock cubes and water to equal 4 cups of liquid to the Instant Pot. Cook on high pressure for 4 minutes, and natural release for 4 minutes, then quick release. Check pasta for doneness and cook for 1 to 2 minutes longer if not cooked through.
I am currently using the Instant Pot Duo with Air Fryer lid and I love the flexibility of it, and the one-pot cooking.

Add remaining ingredients and mix. Cook on high slow cook for 20 minutes or until cheese is melted. Adjust seasoning.

Incredibly fast and so amazing! Even the kids loved it (they do like spicy food though, so adjust your seasonings accordingly!)
