Steak Diane is a pretty classic recipe, it’s one of those very old-school kitschy recipes that you’d probably see at one of the fancy restaurants they eat in on Mad Men. This one is served up with a bit of a twist, cooked sous vide style. The amazing tender steak would definitely be fit for Don Draper!

Ingredients:
- 2-3 pounds steak. I used prime strip that I got on sale at Costco. The marbling in this make it particularly tasty when cooking sous vide style.
- Anchovies: for umami
- Garlic
- Homemade Spicy Brown Mustard
- Onion powder: another layer of umami
- Worcestershire sauce: a third layer of umami
- Garlic
Instructions:
Add ingredients to sous vide bag, and cook at 124 degrees Fahrenheit for 12 hours. As always, with sous vide, it’s going to look really anemic!
I use an older style Anova Sous vide machine, this is a more current model but similar.
I also use this this sous vide container, this lid, and this neoprene insulator. It’s a super-slick setup.
But nothing a few minutes on a very hot grill can’t fix! And still a very nice rare to medium rare inside!

I heated the sauce to concentrate it down, and served with the steak.

Ingredients
- 2 tablespoons spicy brown mustard
- 2 cloves garlic
- 1 can anchovies with oil
- 3 tablespoons Worcestershire sauce
- ½ teaspoon black pepper
- 1 teaspoon salt
Instructions
- Combine all ingredients into a sous vide bag, and cook for 12 to 24 hours at 124 degrees Fahrenheit. Sear steak on hot grill, heat sauce contents of bag to concentrate, and whisk. Serve sauce on steak.
